What is the difference between Gelato and Ice Cream?

Ive looked through several cookbooks trying to figure out the difference (ingredient wise) between gelato and ice cream..ive had gelato before, so i know it tastes much better and is smoother..but alot of the gelato recipes ive looked at looks almost identical in the milk,cream, and yolk ratio to that of Ice cream (1 cup cream, 1 3/4 cup milk, 6 yolks as an example)..so is there a difference in preparation and technique that separates the two?..and also is it possible to prepare gelato in a standard ice cream maker with the paddle..Thanks!!

  2. Gelato is milk based, which makes it healthier than ice cream. It tastes better because there's hardly any whipping involved. Ice cream is cream based, so it has more fat and calories than gelato. It's also whipped, which incorporates air, which results in less product than gelato. If you melted a half gallon of gelato and a half gallon of ice cream, you would get more gelato liquid than ice cream liquid because of all the air that ice cream. My choice if i had to choose? Gelato, because it's healthier and it just tastes better than ice cream.

    AND, gelato is Italian.  Gelato is much more dense, and WAAAYY sweeter.  

    Ice Cream is an american thing, gelato is better.

  4. Gelato is much more dense, and has a higher fat content (or at least real gelato does). The recipes you have described are probably just called gelato. But the traditional has much more cream and yolks.

    Yeah, you can make gelato in a regular ice cream maker. But it won't be quite as dense, since ice cream has more air, and thats what the machine is made for. But it will still be the same rich flavor of gelato.
