Ive looked through several cookbooks trying to figure out the difference (ingredient wise) between gelato and ice cream..ive had gelato before, so i know it tastes much better and is smoother..but alot of the gelato recipes ive looked at looks almost identical in the milk,cream, and yolk ratio to that of Ice cream (1 cup cream, 1 3/4 cup milk, 6 yolks as an example)..so is there a difference in preparation and technique that separates the two?..and also is it possible to prepare gelato in a standard ice cream maker with the paddle..Thanks!!
