  1. The main difference between oolong teas and green tea is the level of oxidation. Oolong tea are half-oxidized, which means that it is more oxidized than green tea, but not as much as black (regular) tea.

    The consequences of the oxidation is that the oolong tea loses the grassy taste associated with green teas, while at the same time losing some of the beneficial antioxidants. The more oxidized a tea is, the less antioxidants and the more caffeine it contains. White tea, for instance, is not oxidized at all, and retains all its antioxidants (three times as much as green tea).

    Jade oolong are often high quality and popular oolong teas, with a taste that is quite different from green tea.
