What is the difference between Portuguese Chouriço and linguica?

  1. I am a former chef and use both, chourico is a pork sausage spiced with paprika, garlic and is dried to firm it up, not smoked, Linguica while having the same basic ingredients and prepared very much like the other has wine use as a flavouring and is a darker colour.

    I have used them both in various Portuguese and Brazilian dishes, and while interchangable, linguica is a much more flavourful sausage and is beter in long cooked dishes, were chourico is a nicer one cooked like a regular sausage or used in quick cooked dishes or as a flavour for soups and stuffings similar to the U.S Andouille type of sausage.
