  1. are you saying " a pie", if so the pie is made with a dough baked pie shell, and can have multiple varieties of fillings, then baked in the oven, or sometimes not, the flan has no pie shell, and is a custard baked in the oven, but in a water bath, hope this helps.

  2. Red R is partially right, I am a former chef and a pie is made in a pie pan/plate, has higher sides, and is generally a double crusted one, now pumpkin, lemon and others either have a single crust, lattice types or a meriange.

Flans are shorter, and single crusted, the flan he is speaking of is the Mexican or Spanish version of creme caramel, but in France it is a shorter squat pie, with a false bottom to release it from the outer pan and only having a the metal bottom left, it can be made like an American pie, with fruits/nuts, berries, apples, pumpkin, and is sometimes used for quiches and savoury pies and cheese flans, it is all in the understanding and where your from sometimes and were the terms clash or are different, not a problem I am here to explain.
