Viper 353 is right, I am a former chef and like consumme, bouillion is just a more refined and nobler stock than broth, broth is the based for bouillion.

The other are referring to the reference to stock or cube bases being called bouillion, that is an American thing, not in other refined country's.

Broth is used to season and cook it while bouillion is a served soup, and is fortified with wines, veg or meats.

Bouillon, in French cuisine, is simply a broth. This name comes from the verb bouillir, meaning to boil. It is usually made by the simmering of Mirepoix and aromatic herbs (usually a bouquet garni) with either beef, veal, or poultry bones in boiling water.

This is not to be confused with Bouillon (soup), a Haitian soup, or stock, which is made in a (somewhat) similar manner, but serves an entirely different purpose in French cuisine.

Bouillon Soup is a Haitian soup traditionally cooked on Sunday. It is made with meat cuts, potatoes, sliced plantains, celery, and much more in a mildly thick sauce (the soup).

Not to be confused with bouillon, French for a clear, seasoned broth.

why does everyone want to confuse the issue..

they all are about a simple soup left after cooking..

some are clarified some are thick

bullion is both in cubes and granules but in boiling water is a broth

My crock pot does not care what my stew is called

a broth to start then I add onion soup what veggies I have and a bullion cube..a dash of corn starch to thicken..

Pour my concoction over rice or mashed potatoes
