What is the difference between linguica and portuguese chorizo?

  1. I am a former chef and buy both here in Toronto Canada, both the linguica and chourico are made from pork, both have the basic same spicing, but linguica is cured with red wine and more paprika, neither is smoked but air dried to firm them up and both have to be cooked.

    I tend to used linguica in chicken and pork dishes, like with pork and clams or stuffed inside for churruscaria, I like chourico for soups and stewed beef items, even baked into cornmeal bread dough for a portuguese sausage roll like snack.


  2. Linguica IS portugese. Chorizo can be from Spain or Mexico. Both linguica and spanish chorizo are solid.
