  1. Saimen is basically stir fry noodle

    Ramen is hot water over noodle with topping


  2. Same thing. It seems like it depends where you're from.  Both are broth soups with thin noodles and various types of garnishes.

  3. Basically the same difference between spaghetti and fettucini.

    Same recipe, different shape, hence, different name.
