  1. Hungarian is sweeter a a brighter red color, there is also a smoked paprika and a somewhat spicy/hot spanish style.

Well as a former chef and having use alot and both from Hungary and Spain, all the answers so far have a point, here is the real deal, Hungarian paprika come in 3 types, sweet, hot and now a smoked version, made from dried peppers grown all over Hungary, and blended like wine for flavour, Spanish to come in 3 forms like the Hungarian.

    Spanish tends to bit lighter and sweeter while the Hungarian darker and more pronounced in flavour, I like Spanish for any application, but when making cabbage rolls, paprikash, goulash or other Hungarian dishes it is alot like soya sauce, you use the one from the country your cooking the food from. At least that is what I found in the 20+ years I was a chef in Canada, Jamaica, Singapore and Japan.
