What is the difference in chow mien noodles?

Some recopies say use egg noodles, others say vermicelli and some say "chow mien noodle". Which one is the thinner with a bite like at some Panda Express or Vietnamese restaurants?

  1. There are many types of asian noodles.  Noodles used for "chow mein" are typically made with egg and wheat flour and are yellow in color and typically thin.

    Vermicelli is typically made from rice flour and is white (and slightly transparent) in colour and is generally used in soup.  However, there is a famous dish called "Singapore Fried Vermicelli" which is of course fried with curry and a variety of toppings.

    There is also a famous egg noodles that is infused with dried shrimp eggs which is used in authentic wan-ton noodle soup.

  2. The ones in the Vietnamese restaurants use vermicelli for Pho.

    Chow Mein in Cantonese means stir fried noodles. It doesn't have any specific type of noodles. For chow mein, it is usually the yellow type of egg noodles.
