  1. The differences between gas grills and charcoal grills, besides the obvious that one cooks with propane gas and the other with compressed charcoal, are in the taste of the food. But, cost could be a factor...a good gas grill will be much more expensive than a good charcoal grill. And cost of operating is slightly less for charcoal as well.

Charcoal grills do produce a smokey type of flavor naturally due to the burning process to make heat. Some might argue this smoke may impart carcinogens that may be of a cancerous variety though.

The gas grills are said to be cleaner in cooking methods, but the food cooked usually produces some grease which does flare up and cause some sooty residue of the food being cooked. Gas grills are also a very quick cooking method and slow roasting on some gas grills is very difficult to control, as the grill tends to either be hot or cold depending on how it is set to cook.

When one uses a charcoal grill to slow roast, a method of indirect cooking works well in covered types of charcoal grills and they usually even come with a vented lid to even help control the cooking temperature.

In ease of operation the gas grill is simple to start and quick to begin cooking. The charcoal grill needs to be fired to begin heating and if charcoal starter fluid is used the residue of that fuel must be completely burned off or it may impart a gaseous flavor to the items being cooked. Timing is the key to using a charcoal grill artfully and once mastered the charcoal grill, in my opinion produces the best tasting and appetizing food of both types of grills.
