  1. Common meringue is whipped egg whites, with sugar and flavor such as vanilla. Swiss is made over double boiler, and Italian is with a boiling syrup of corn syrup water and sugar, poured into the whipped egg whites.  French merinques are the above common, then piped onto a parchment lined baking sheet and baked into a crisp cookie like confection.


  2. common meringue is a mixture of beaten egg whites & granulated sugar, Italian meringue is prepared by slowly pouring hot sugar syrup over stiffly beaten egg whites, then beating constantly until mixture is creamy. i still have to look how they make swiss meringues, it could be a variation between soft ( like in cakes & baked alaska), & hard meringues (like kisses).
