  3. each area has its own taste. but i find butter sauces in more french foods and tomato sauce in Italian. Basil is italian.

  4. Country French and Italian cooking is much the same. Fresh ingredients, local meat, sausages, fresh bread.. The more haut French cuisine relies on the butter and creamy sauces. Look in the book Larousse Gastronmique for historic information on the "mother sauces".

Different regions have different foods....and really cant be generalized .I was raised in Orleans France and contrary to popular belief French food isn't always a fancy affair...Our meals consisted of soup...salad,,,or Artichoke ,a main course such as roast duck...then dessert.... sometimes flan...sometimes fruit....we always had baguette,Pate' and salami..

    There are many recipes that are "country foods" such as rillettes ...born of the desire to use everything from an animal...because times were hard....

    Historically, French cuisine originates directly from Italian cuisine.  The Italians already had a sophisticated culinary tradition at a time when in France the height of cuisine was spit charred meat on the end of a dagger.

    French cuisine began in the fifteenth century when Catherine Mdeici of Italy married King Henri II of France and brought along her own Italian cooks when she moved to her new husband's homeland.

    Much of what is used in French cuisine even orignated from Italy at this time including: broccoli, artichoikes, haricot beans, savoy cabbage, truffles, petit pois, pastries, cream puffs, macaroons, cakes and forks.

    The last is not a joke because before this time French table cutlery was basically just the knives I mentioned earlier.

When I think of French food I think of creamy sauces that are light and white...or light brown in color....and rich desserts using lots of cream and eggs....that is my first thoughts....and when I think of Italian cooking I think of the north Italian styles that are more like France...but the south is more spicy and they use more tomatoes....different parts of each country have their own styles and flavors....just like in the USA...or other countries...each section of each state has their own identity how they take a potato, onion, green pepper, mushroom and make it taste special in their own way....some might spice it up with hot flakes of pepper and they call it their own...and others would not like that taste...French use wine in their sauces and they use it also for their beverage...Italians do the same...there are many ways these countries are the same...

    Spices are different too....French are known for certain herb mixtures "herbes de Provence" which are: basil, chervil, thyme, tarragon, sage, rosemary , marjoram, oregano and parsley in varying proportions. The Italians are known for using some of the same along with garlic. Then there is the "bread" ...French bread is so popular around the world...along with Italian breads each one makes their own specialty...even though both countries are the same in what they use it's the way they put it together..and present it....Our mouths would be missing some great food if it were not for the French and Italians...I must add the food sold on the streets in both countries too are different from what is prepared in classy restaurants....but they are prepared with lots of confidence and love to give the person dining a great experience in their art of cooking.
