bring water to a boil....take a peach and on the end(not the stem end)make 2 slices like an X...place in boiling water for 30 seconds.remove with a slotted spoon.and place in cold water.remove the skin starting at the x cut at the end.

I just use a good old fashioned peeler.

place four peaches in a one gallon zip lock bag, add one cup water    

sealbag and microwave on high for 45 seconds. skins come right off.

this also works great for tomatoes.

Ericka is right, boiling water for a few seconds and they slide right off.

Dip into boiling water for about 10 seconds, let cool, then peel skin off w/ paring knife.  Once you kind of grip the skin between the knife and your thumb, you can kind of just pull it off.

They slide off if you blanch them real quick in hot boiling water.
