"Bullet Train" the latest (as of June of this year) is the French TGV.  The Japanese have a new line and train to go on it that will operate normally at over 600 kph with a top speed of over 700 kph.

Maglev is now approaching the 800 kph level as their technology improves. But at this point none have been put into service that top the French TGV. Shanghai's Maglev tops out at 450 khp.
