Pozole appears to be the typical dish "plato tipico"  of Guadalajara.  Also apparently they have there own twist on the enchilada "enchilada tapatia" and a stew called "birria".

Torta Ahogada, in Waldos of Lopez Mateos Ave in Guadalajara Jalisco.

Torta is a Mexican Sandwich, its made with a local bread call "Birote" and simmer into a tomatoe and hot pepper sauce, and inside it has "Carnitas" pork meat cook fried with certain herbs...

First of all, I don't know why you answer this question in English if your name tells me you are Hispanic or Mexican. I am from Guadalajara living in the USA for 9 years. I lived in Guadalajara for 37 years so I know all about the favorite dishes. There is not only one but the favorite one is the Tortas Ahogadas made with french bread that in Mexico we call in different ways like, bolillo or birote depending in what area of the country you are. The second choice would be the tacos, everybody loves tacos and is a staple in our diet, from lengua (tongue), tripa (beef tripe), pastor (marinated pork), carne asada (steak) etc. After that I would say we love to eat menudo and pozole along with some other fritangas/antojitos like tacos dorados, tortas y tostadas de pata o cuerito, lonches y tostadas de lomo. But a favorite in Guadalajara is the Lonche Gemma, made of pierna (pork loin), chicken, milanesa in a secret formulated tomatoe salsa that everyone likes. As you can see we have a rather diversity amount of favorites and I do not think people has only one. The birria is also a favorite but since it is made of chivo (goat) some people do not favorite because of its strong smell and taste. But I still would go for the tortas ahogadas as a number one. I can give you names of several places where you can get them.
