  1. There are a couple of methods.  It depends on whether you're using a doubling cube or not.

    With a doubling cube, you multiply the score by the number on the cube.  Your score is 1 if your opponent has started taking pieces off the board.  Your score is 2 if your opponent has all his pieces still on the board (gammon).  Your score is 3 if your opponent has any pieces in YOUR inner table (backgammon).

    Without a doubling cube, you can just go by wins and losses, or you can count pips (count the number of moves it would take to get all your pieces in).
