  1. chicken and fish sounds like a velouté to me ...

    veal stock and roux ... demi glace or demi

    ** awesome .. I learnt something during my apprenticeship! ;)


  2. that "stock" is called a "bouillon" in French.

    Respectively:

    roux et bouillon de veau

    roux et bouillon de poulet

    roux et bouillon de poisson
