For Indian, think about all the tandoori dishes -- those have a lot of flavour without a lot of fat.  The dishes that are more stew-like are sometimes healthy, but sometimes full of hidden fat (it depends on the restaurant).  Still, those veggie stews are a great way to load up on your vegetables without it being too bland.

    For Chinese, consider steamed dumplings, especially the ones with a mix of meat and vegetable inside (more veggie, less meat).  And tofu dishes, and soups.  Fish with that hot salt-and-pepper (and jalapeno) seasoning is delicious and very healthy.   Get a side of bok choy made with chicken broth and a little oyster sauce.  If something is shiny, that means it is coated with fat, and probably has more calories than you want or need.
