  1. For simple flight under grat conditions, the radio is usually configured such that pitch is around -1 degree at 0% throttle stick, and somewhere around 10 degrees at 100% throttle stick. However, it is also necessary to modulate the throttle- usually the radio is set up so that the throttle is brought up to near its maximum when the blades are passing 0 degrees pitch, which lets the model maintain a constant 'head speed' (the rotor's RPM). This is beneficial for consistent and smooth flight performance.


  2. There's no such thing as "ideal" - it depends on the NACA airfoil shape, available power, power requirement, rotor head design, rotor RPM, airspeed, blade twsist, density alitude, and dozens of other factors.

    Most airfoils begin to stall at an angle of attack of 15°.

    There is no rudder on a helicopter - most helicopters have a main rotor, tail rotor, vertical stabilizer "fin", and a horizontal stabilizer "wing."
