  1. When animals or plants decay, the proteins decompose and form ammonia, which is used by bacteria to produce nitrite and nitrate (which is a plant fertilizer).  This is what happens in an oxygenated environment.  

    If the decay takes place where there isn't oxygen, bacteria will convert the nitrate to nitrogen gas which is released into the atmosphere.
