  1. Lipids/fat globules are too big for it to be absorbed by the bloodstream. So it needs to be broken down to smaller form, so called fat droplets, with the aid of bile salts. And fat globules are too concentrated. If they are absorbed by the blood, it will blocked some of the capillaries.

Lipids are fatty materials which are not soluble in water(e.g. u mix oil, which is a fatty material, in water,it would not dissolve) and the main constituent or u can say solvent of our blood is water so lipids which are ingested cannot be dissolved or u can say are not soluble in blood stream so emulsification is required which "solubilizes" lipid in the blood stream(sloubilizes is a different terminology from soluble.Soluble means that the thing itself dissolves and solubilize means another thing is required to make one thing dissolved in other)So we have different natural emulsifiers in our body which "solubilize" lipid in blood stream to make it available to body
