Question:

What is the light green salsa-like sauce that they serve with tortilla chips in mexican restaurants in Texas?

If you could tell me what they call it or if you have a recipe or know the ingredients I would appreciate it. Here in Illinois I have not seen it on the menu. The tomatoe salsa is all that I have ever had up here. Thanks, Leslie E.

    GREEN CHILE SALSA

    Combine 1 large tomato, chopped; 1 small onion, chopped; 1 small can (4oz.) diced green chile's; and 1 Tablespoon vinegar. Mix until blended.

    SALSA VERDE

    In a blender or food processor, combine 1 can (13oz.) tomatillos and their liquid; 1 large onion, cut into chunks; 1 clove garlic; and 1 small can (4oz.) diced green chile's. Whirl until smooth.

  3. Its called tomatillo. It is a small green tomato that is cover and you have to peel it .  You get 1/4 of pound of tomatillo, dump it on a boiling water for one minute. Then take it out immediately and blend it with 1 Jalapeno pepper and 5 peeled garlic cloves add salt to the taste and that's it.

  4. This may be what you are talking about.  It's my favorite dip and this is actually based on a recipe from a restaurant.  It's a light green color because of the addition of the sour cream.  If you live in an area that doesn't have fresh tomatillos; you can purchase them canned.

    Ninfa's Green Sauce

    3 medium size green tomatoes, coarsely chopped

    4 tomatillos, coarsely chopped

    1-2 jalapenos, coarsely chopped

    3 small cloves garlic

    3 medium size ripe avocados

    1/4 - 1/2 cup cilantro, chopped

    1 - 2 tsp salt

    1 1/2 cup sour cream

    Place green tomatoes, tomatillos, jalapenos, and garlic in pan, bring to a boil.  Lower heat and simmer 15 minutes or until tomatoes are soft.  Remove from heat, cool slightly.  Peel, seed, and dice avocados.  In food processor, place green tomato mixture with avocados, cilantro, and salt.  Process until smooth.  Put in a large bowl.  Stir in sour cream.  Cover with plastic wrap and store in refrigerator.

    To the person below me - So true about the sour cream! During my time in Mexico I saw plenty of Salsa Verde with a drizzle of sour cream, but I live in Texas and I have never seen it that way.  Tex-Mex, I suppose.  I've seen it either as pure salsa verde primarily made with tomatillos or a creamy variation of it like I posted.  This recipe, from Ninfa's restaurant, actually doesn't refer to it as Salsa Verde.  Maybe because it's so far placed from the original Salsa Verde recipes.  I enjoy both of them, but I like to indulge in this creamy one more.  Like fried tortilla chips aren't enough, right?!

  5. It's tomatillo salsa.  The recipe follows but you may have to look arounfd for tomatillos.  They look like small green tomatoes with a paper covering, bu they are not actually tomatoes.  They are also used to make chili verdi.

  6. Tomatillo Salsa

    Ingredients1 1/2 lb fresh tomatillos or 3 (11-oz) cans tomatillos

    5 fresh serrano chiles

    3 garlic cloves, unpeeled

    1/2 cup fresh cilantro

    1 large onion, coarsely chopped

    2 teaspoons coarse salt

    Preparation

    Preheat broiler.

    If using fresh tomatillos, remove husks and rinse under warm water to remove stickiness. If using canned tomatillos, drain and measure out 2 cups. Broil chiles, garlic, and fresh tomatillos (do not broil canned) on rack of a broiler pan 1 to 2 inches from heat, turning once, until tomatillos are softened and slightly charred, about 7 minutes.

    Peel garlic and pull off tops of chiles. Purée all ingredients in a blender.

Jeez people...Its called SALSA VERDE and its made with tomatillos,lime and mild peppers (anaheims) that you can find in any Mexican food section in your local supermarket including Safeway, that isn't known for their "gourmet" sections...its super easy to make in a blender or processor...but the best is made of roasted fresh chiles that do at the same time you are barbecuing your main meat ingredient like the chicken, pork or fish that you are going to throw in your tacos or on your tostada...

    Recipes abound on the net now that you know what it is called! Easy and your friends will appreciate what you've learned!

    Omit the sour cream and avocado in the above recipe and you will have SALSA VERDE that is a variation. Most mexican recipes serve the sour cream on the side or drizzle it over the dish (they call it crema..) We can substitute with a thinned sour cream. Same with avocados.
