  1. I can tell you about Trinidad cuisine. I'm not keen on Tobago Cuisine.

    The Trinidad national dish is:

    Pelau - http://recipes.caribseek.com/Trinidad_an...

    Other great local dishes include:

    Doubles: http://en.wikipedia.org/wiki/Doubles_(fo...

    Roti: http://en.wikipedia.org/wiki/Roti

Pulori: A sweetened rounded ball of fluffy fried dough that is often dipped in sweet/spicy tamarind sauce or mango chutney.

    Aloo pie: http://en.wikipedia.org/wiki/Aloo_pie

    Browned-Down Stew

Trinidad and Tobago are both Caribbean Islands. Fish in not scarce in certain areas.

  2. Local cuisine is normally fried jellyfish marinated 'ala' Tom Conner's. another speciality is the codfish. You should check it out. Fish is expensive as t&t is no where near the ocean, and fish is scarce. Just ask for the Cod special, and you will be in for a surprise.
