Hi, it's possible that there are several "main streets", vhen you come from "Concorde", the Main Street is : Boulevard Saint Germain,

There is Boulevard St Michel, may be considered like the main street, but I don't know, the heart of Quartier Latin (Odéon, Maubert, rue des Saints Pères, rue Bonaparte, rue Jacob, Place de Furstenberg ) is around Boulevard St Germain.

I am living in Paris in the Eiffel Tower's District, I am walking often to "Rue de Sèvres, Boulevard Raspail, rue de Rennes" I know very well the districts 7th, 6th and 5th.

There's also rue Mouffetard, which is the site of a open air market all the way up the street
