What is the most flavorful/potent type of Mushroom?

I am wondering what type of mushroom has the very potent, almost vinegar-like taste?

I had it on a sandwich at Panera and the taste was very overwhelming. It is unlike the more bland mushrooms that tend to be on most pizzas or in salads.

Does anyone know the name?

  1. Maybe not potent, but morels that I've found in the woods have had more flavor than anything I've bought in the store.


  2. The one at panera was a marinated portobello.  It is not the taste of the mushroom but the marinade.

  3. Maybe Portabello mushrooms. They are in a lot if veggie burgers and they taste pretty good. Plus, I looked on the Panera website and the only mushrooms they use are Portabello.

  4. You probably had a marinated Portobello, this is acctually a Cramini mushroom once it hits about 4" they change names... magic almost huh, magic mushrooms.

    Prob marinated in balsamic/olive oil herbs etc.

  5. Most likely it was a portabella.. was it big and thick? Portabellas get very big and are commonly grilled for sandwiches.. they're delicious..

    I also love Shitake.. used commonly in asian food.. LOVELY taste
