There were more than one for me. I enjoyed watching the opening and closing ceremonies; they were absolutely amazing. It's hard to fathom how much work was put in to making it so spectacular. Other moments that stood out for me were Phelp's achievements, including the finish by .01 of a second, the close race where Lezak anchored the relay, and of course, Phelps winning the 8 gold medals. Usain Bolt was also great and amazingly fast.
