  1. there are mulitiple jedi academys but the main jedi temple is on the capital planet Coruscant.

  3. In truth your question has no answer because there was not a "Jedi Academy" in any of the Star Wars movies.  Luke starts one on the moon of Yavin 4 in the Jedi Academy book trilogy but there is not one in the movies.

    The Jedi Temple, however, which basically can be seen as the same as an "Academy" was on Coruscant.
