What is the name for a doctor who is like an anesthesiologist but works with gas? Ness-ologist something?

I think that they work with gas masks more so than IVs? Someone was telling me that their daughter was one of these.

How about nurse anesthetist?  It sounds like you misunderstood what they said.  It's either that or anesthesiologist -- and both work with various form of medication administration: IV, gas, nerve blocks, injections.....

There is a nosologist which classifies diseases and a neurologist that works with the brain, but I've never heard of a Anesthesiologist called anything different.

Anesthetists or anesthesiologists work with both gas and chemical sleep inducers and the name covers both.  More than likely your hearing or someone else's pronununciation skipped a beat.
