In the U.S.A its aircraft mechanic. This name comes from their A&P licsencse. this stands for Airframe & Powerplant.

They are usually called aircraft mechanics. There are different classifications of these depending on what they can repair on an aircraft. Like cars there are trans, body, engine mech etc.

In America they call them A & Ps or Airframe and Powerplant [mechanics].

Everywhere else they are officially called Aircraft Maintenance Engineers to make the job sound less blue collar.  In reality they are called aircraft mechanics.

The newest (politically correct) term is Aviation Maintenance Technician, or AMT.  I'll stick with what it says on my airman's certificate... Mechanic, Airframe & Powerplant.
