What is the name of that Mexican cheese thats white and melts real good they use on things like tostadas?

  3. Mmmmm... yeah that stuff is good! It's called " queso fresco" which in english means "fresh cheese". Us Mexicans use it on enchiladas, tostadas, sopes, on top of beans, and of course in quesadillas cause the cheese melts perfectly... The pronounciation is "keh-soh fres-coe". Now, don't get your cheeses mixed up, because there is a variety of Mexican cheeses that look the same, but taste TOTALLY different. We also use "queso seco", which in english means "dry cheese", on the dishes listed above. It has a very salty, and kind of bitter taste, but I love it! The texture of it is extra dry and "crumbly", unlike queso fresco which is very moist and mushy... This may seem a little gross and weird, but queso seco smells like dirty feet!! That's the difference between those two cheeses...You got the fresh, moist cheese, and you got your dry, foot-smelling cheese. But, they're both great! Bon Appetit!

  5. try chihuahua or asadero. they melt better than manchego, or jack.  you can even use mozarella, if you want a hot dip with cheese that pulls.

  6. Manchego is from Spain.  Cotija cheese doesnt melt.

    It's most likely Queso Asadero, this is a semi soft melting cheese similar to Monterrey Jack or Fontina.

    The other possibility would be Queso Chihuahua, also a semi soft cheese.

  7. We have a cheese in England that does that job, its called mexicana. It also has little bits of chilli and pepper in it. Really tasty when melted ; )
