What is the name of the cheese that Nicaraguans fry up and serve with plantains?

Here's another description: fried bricks of salty cheese that squeak like Wisconsin Cheddar curds when you bite into them. I have a photograph of these fried cheese bricks, but I don't see how to add a photo.

  1. having lived there many years ago im pretty sure that the cheese youre talking about is queso blanco the deal is its made from goats milk thats the kicker you might try to ask for queso blanco de cabra we lived with a semi unclaimed goat herd and our house keeper would milk the gaots and make the cheese fresh once a week apparently the goat is the unique flavor and the squeakyness I havent tasted in cheese from cows


  2. QUESO FRITO

    Fried Cheese (Queso Frito)

    1/2 pound melting cheese (Provolone, Mozzarella, Gruyere, etc.)

    Flour

    2 eggs, beaten

    Dry bread crumbs

    2 tablespoons olive oil

    2 tablespoons lemon juice

    4 teaspoons minced green onion

    2 teaspoons minced parsley

    1 teaspoon minced capers

    Cut cheese into 2 1/2- x 1/2-inch sticks. Dust with flour. Dip in beaten egg and into crumbs. Press crumbs around cheese; dip again in egg and crumbs to make a firm coating. Refrigerate until time to serve. In Presto® electric deep fryer, deep fry 3 or 4 at a time, turning once, until desired brownness is reached. Remove from oil and drain on absorbent paper. Repeat until all are cooked.

    Makes about 24

    Combine remaining ingredients and serve as a dip for cheese.

  3. It's called Queso Frito, it looks like fresh cheese but if you use fresh cheese it will melt and not fry.

    There are a lot of Nicaraguan markets in almost every Us city now. Look for one, and ask if they bake Picos, too. Try them and  you will remember me forever.

It could be either:    Queso Blanco-it will become soft and creamy when heated, but will not melt.  Or   Queso Para Freir- This cheese is used frequently for frying because it resists melting even more than Queso Blanco. In fact it is a variation of Queso Blanco that is similarly white and crumbly, but saltier.

  6. I believe it's Queso Blanco (White Cheese). I comes in blocks usually by Latino Grocers or Food Distributors.
