Question:

What is the name of this Mexican food dish?

I went to a party Saturday night and there was a Mexican dish made with a kind of pasta in a thin, tomato-like sauce. I think they called it Fidelio, but I'm obviuously wrong because I can't find it anywhere on the web. Can anyone tell me what the name of this dish is, it was great!

  1. what you had was FIDEO and it is easy to make

    it comes in 4-6 ounce packs ( a type of angel hair pasta ,thin)

    in a 2-qt.pot heat some corn oil and brown the entire pack (do not break ) drain and set aside.

    with a couple of tablespoons of the oil sautee the following

    i med onion chopped

    2-cloves garlic

    next add pasta back to pot and add 1-6 oz can of tomato sauce

    and enough water or stock to cover at least an inch above

    bring to a boil ,reduce heat  season with salt stir and cover simmer for 10 -15 mins until pasta is aldente

    let cool covered

    serve in shallow bowls this is really great with all dryer foods such as tacos enchiladas and so on ..... enjoy

Look in the grocery aisle with the pasta.  This product usually comes in a yellow box, and if very easy to make.  Sometimes it is called Fideo.  End product depends on if it is made with water or broth, and additives like onion, veggies, and spices.  Talk to the hostess of the party and find out how she made hers.

  4. Fidello with Chicken ( vermicelli )

    Ingredients

    1  chicken breast, cubed

    1 cup vermicelli or thin spaghetti, broken into 1-2 inch pieces

    2 teaspoons cumin

    2  garlic cloves

    1/2 teaspoon salt

    1/2 teaspoon pepper

    1/4  onion

    tomato sauce

    1(16ounce)can chicken broth

    1  potato, cubed (optional)

    Directions

    1.Chop up chicken breast, season with a little salt and pepper and brown in skillet.

    2.Remove chicken and brown the vermicelli. Put chicken back in skillet, add seasonings and etc., along with maybe 1/3 to 1/2 can tomato sauce for color, and can of chicken broth.

    3.Simmer uncovered 20-25 minutes. Add more salt and pepper to taste if necessary.
