What is the possibility of starting a fire if I have an air conditioner plugged into a timer for 5 days?

If your air condition is on automatic, where is works then takes a break for a while then starts working again and so on, then no because if it's on Automatic then it won't be overworked because it would be taking breaks often and so you won't really start a fire or anything. So just make sure you keep it on automatic too on those 5 days. =)

depends if the timer Amps is rated for the Amps the air conditioner uses.

If the A/C uses less than what the timer is rated at then I would sy no possibility for five years.
