  1. because there are so many variations of flour world wide scientist have found as many as 30 types of protein. flour commonly used in the united states includes all-purpose, self-rising, pastry flour, instant, semolina, vital wheat and red spring wheat to name a few. although, GLUTEN accounts for the highest percentage of proteins in flour, there are also GLIADEN, GLUTENIN to name a few.
