  1. preservative and to keep moisture out.  thats the old way to make it and still the best


  2. You need salt to make the meat turn into jerky. Salt dries up the meat. Have you ever put salt on a snail? It will dry it up and kill it ASAP.

  3. To preserve the meat and keep it from spoiling.  That's how they did it before refrigeration.
