  1. The little red bit is a chicken embyro. When you eat free-range eggs, fertilized eggs are unavoidable. If it's too gross for you, stick to industrialized eggs.

  2. You know, I've never actually seen a "red bit" in an egg. Okay, that is a little gross.

It is probably . . . ew . . . chicken blood. It's kind of sick how people kill animals these days for us to eat them. I haven't been eating meat lately, since I've been trying to convert to being a vegetarian. If you want to know how that egg got onto your plate . . . if you really really want to, here is a link: http://www.goveg.com/factoryFarming_chic...

  3. They are called meat spots or blood spots.  In unfertilized eggs, they are formed when a tiny blood vessel ruptures during the formation of the egg.  It is a somewhat rare occurrence, and most eggs with blood spots are discovered during candling and sold as grade B eggs.  If you do get an egg with a blood spot, it can actually be a good thing - it means the egg is very fresh - as the egg ages, the yolk takes up water from the albumen which dilutes the red spot. Blood spots do not alter the nutritional quality of the egg and contrary to what a lot of people believe, they do not necessarily indicate a fertilized egg.  But, if it bothers you, it can be easily removed with a knife.

If you are getting these spots in a high percentage of your eggs, then it could mean that the eggs have been fertilized - try switching brands.  Some free range chickens are allowed to mix with roosters and you can get fertilized eggs.  Other free range farms still keep their chickens removed from the roosters and fertilized eggs are not possible.

  4. Its blood from the chick.
