  1. First off, it's spelled: COUSCOUS.

    Secondly, what difference if it is for one or one hundred?   The ratio is the same.

    The ratio of liquid to couscous is always 1:1.


  2. 100g of dry couscous cooked in 200ml of water/stock, and a teaspoon of olive oil or a marble size piece of butter.

    eg. 1cup to 2 cups

  5. I would put the amount of couscous you need in a bowl and just cover that up with boiling water. Cover the bowl and wait 5 minutes and it's done !

  6. 1 part cous-cous 2 parts boiling water. Pour the water over the cous-cous, cover and leave til the water has been absorbed. Add fresh herbs, crushed garlic, lemon juice and season to taste.

    Can't stand cous-cous. Try bulgur wheat.

    Sweat off onions and garlic in olive oil, add coarse bulgur wheat and stir until the wheat is 'glassy' (a bit like risotto), Pour boiling stock over it (1:2). Remove from the heat and let the wheat absorb the liquid. Flavour as for cous-cous.

  7. I believe it's one to one!  So one cup couscous to one cup water or broth.
