What is the reality of working conditions in American meat Slaughter houses?

I have just read Fast Food Nation by Eric Schlosser and I was horrified to read the gruesome details depicting conditions in American Slaughter Houses. I realize that in many cases these descriptions can be an exaggeration but I was wondering to what extent that this is true. IBP, ConAgra Beef Company, GFI America Inc, and Tyson were all cited as the nations leading beef production companies, are these the companies that supply the beef to most restaurant chains?
