  4. Most powdered milk is made from the skimmed milk left over after the cream has been removed for butter production. It is pasteurised, then concentrated by evaporating off most of the water. The concentrated milk is then sprayed into a steel cylinder 32 ft. (10 m) high. Air, heated to 392 degrees fahrenheit or 200 degrees celsius, is blown into the spray dryer and evaporates the remaining water, leaving a fine milk powder.

  8. powdered milk is milk with all the water removed and something added to prevent clumping. all you have to do then is add water. milk is 85 to 90 % water so a little powdered milk makes a lot.

I guess you can ask the same about juices from concentrate, water has been removed. Water weighs a little over 8 lbs per gallon. So if you fill a tanker truck with 8000 gallons of orange juice, you are paying to ship (8000galX8lbs) or 64,000 lbs of water. To save on transportation most of the water is removed and more concentrate is added. The water is added later at processing and no transportation charge added. Powdered milk can be stored on the shelf and then when needed just add some H2O. I was stationed in Thule Greenland and powdered milk was shipped up during the short summer months during re-supply and then processed for use the rest of the cold year. We called the processing plant "The Iron Cow" The milk was nice and cold and just as delicious.
