What is the recipe for the sauce in Chinese food? (soy sauce) i think?

you know the sauce in Chinese food. i really like chinese food but whenever i try to make it it doesn't come out right. Can you give me the recipe? thanks =)

  3. the basic flavour of chinese stir fry is garlic ginger and spring onion in sesame oil. fry them fast and high, add meat then blanched vegetables, soy sauce (available from most supermarkets). rice or noodles in at the end and you've got a yummy and healthy chinese dish

  5. Recipe for soy sauce? You can just go to the store and buy many soy sauces. I've never really met anyone that made their own soy sauce before..

  6. It depends on what kind of dish you are preparing, the brown sauce for chow mein, mix vegetable stir fry is usually

    - chicken, pork  & ham stock (2 to 3 tablespoons)

    - light soy sauce (1.5 tablespoons)

    - Chinese yellow wine or rice wine or dry sherry (1 teapoon)

    - sugar (1 teaspoon or lesser if you do not like it to be too sweet)

    - cornstarch (1 teaspoon or lesser - depends on how thick the sauce you want it to be)

    - a few drops of sesame oil (sprinkle on your food before you spoon it on the serving plate)

    (homemade chicken + pork & Chinese ham stock is what we usually use and it takes about 5 hours or more to prepare it, you may use can chicken stock to replace it)

    Good quality of the chicken stock and good quality soy sauce give you the flavour of what you need.

    We sometimes use oyster sauce instead of soy sauce when we prepare braised mushroom dishes (or for seafood dishes, we use both oyster sauce and soy sauce, you can play with them!)

  7. Chinese people in the US buy their soy sauce and the people that are actually in China buy or make it themselves. so you can buy it at asian stores. my favorite brand is Lee Kum Kee soy sauce

  9. there are many different sauces in chinese food,

    but here's an easy basic one:

        * 3/4 cup beef broth (beef bouillion cubes can be used)

        * 1 tablespoon plus 1 teaspoon oyster sauce

        * 1 teaspoon dark soy sauce

        * 1/2 teaspoon sugar

        * 1 tablespoon cornstarch

    PREPARATION:

    Combine the above ingredients in order and bring to a boil, stirring. Yields about 1/3 cup.

    >  THE best thing to start with is a bottle of soy sauce,

    for sure - i would recommend the japanese type,

    which you can use immediately:  just pour it on!
