What is the red pepper powder in Chinese Dumpling Restaurants?

It comes in a little pot, with soy and rice vinegar next to it.

You mix it all together and it makes the sauce for the dumplings?

  1. May be a Chili powder, or ground Szechwan red pepper.

    You can ask the waiter next time you're at that restaurant

  3. It might be kochu garu, although it is more of a Korean thing, but given that a lot of Chinese restaurants are Korean owned/influenced that might be it. Its the spice used in kimchi.

    Most places in the US regular chili powder and I've even seen some use crushed red pepper (the type you use on pizza). Sriracha is also very popular. I use that stuff when I have dumplings at home. You're probably not thinking of sriracha as it is not a powder.

  4. I've eaten a lot of dumplings in many Chinese restaurants and I've never had it served in a little pot! Sounds like they do in that place anyway but it doesn't look like anybody else has either, eh?

    It sounds like cayenne!
