Bones contain both inorganic (mostly calcium phosphates) and organic (mostly proteins) material. The inorganic constitutients of human and chicken bones are probably the same but human and chicken proteins are different (they have different amino acid composition). The structure of the bones is probably also different: birds' bones are adapted to flying, so they probably have a lower density than human bones
