Most economical and environmentally friendly - WALK !!!

Safe and economical:  train and then the ferry, back to a train in Dover.  Fastest:  and possibly also economical, Ryanair or easyjet. there's a bunch of discount airlines...they generally travel between less obvious airports.  

or you could go on a bus, but I don't care for them...personal choice I suppose.  They ARE cheaper than the train, but slower, too.

Then, of course, there are the more adventurous ways...rent a bike, walk, hitchike, etc.
