what is the satirical technique used to have animals symbolize humans? I know this type of satire is used in Animal Farm.

Well, basically you are giving them the unlikable human characteristics...greed, sloth, envy...and making them capable of vocalizing in human speech patterns.  If you read the book, or watch the movie, they seem to become rather Communistic...at least by my perception, but I haven't read the book in about 16 years...

I think the term is anthropomorphism, or anthropomorphic satire.
