What is the secret ingredient in onion bhaji from an indian resturant?

I have tried countless recipes but none taste like an indian resturant recipe.

  2. coriander is 'optional' and could be the missing ingredient! also, be sure you're using the right recommended chili powder, etc.

  3. Simple. i am not running a restaurant but i can give you a recipe. Cut onions in round slices. careful it may fall off.

    Make a watery dough of basin ( chena dhal powder) 100 gms, chilli powder 5 grams ( if you want it to be hot you can add more), salt to taste, cooking soda one pinch.Mix them well in a more liquid condition. keep oil in the frying pan and heat it.

    Now take the cut onion pieces should be taken and coated with the basin liquid and put in the oil and fried both sides. take out and serve with ketchup or chutney.

    There are various modifications available. You can use potato, banana, chilli etc for the bujji instead of onion.
