Question:

What is the shelf-life of a beet and how do I cook it?

I bought a raw red beet last week and put it in my pantry because I planned on cooking and eating it... Well, I wasn't too sure how to (I was planning on boiling it in a pot of water and then slicing it and serving it with butter) but now it's gotten soft, kind of like a potato would before it starts to rot. Does this render the beet inedible?
