What is the standard required temperature for restaurants to keep soup?

  1. The temperature danger zone is 41 f-135f The health dept says it has to be above 135 f.  Most restaurants I have worked at, hold it at 155 f.  Remember that if you are re-heating, it must be brought to 165 f before it can be served or put into a holding pot.
