  1. An old axiom of biochemistry is "all enzymes are proteins, but not all proteins are enzymes".  So, enzymes are invariably a polymer of amino acids that we otherwise call a protein.  As with any protein, the amino acid sequence determines the properties of the macromolecule.  Hence, the protein will fold back upon itself creating a three-dimensional structure including a "pocket" or site for the specific enzyme substrates to bind to.  The enzyme then speeds up the reaction among the substrate molecules and releases the products into the cell.  The key here is that the specific structure of the enzyme determines just which substrates it binds and hence which specific reaction is catalyzed.
