  1. No such thing as a stall speed, especially for an FAR 25 certified aircraft. Wings stall at a critical angle of attack. Stall speeds are not even available in the AFM for a transport category aircraft for just that reason. Varies widely. Having said that, at FL350 and max gross, my guess is you'd want to keep the speed up above 180 kts or so. But I don't have the "coffin curve" for an A340 in front of me so it's just that. A guess.

    Nothing called a takeoff speed in an Airbus or other airliner either. Rotation speed, however also varies. But it can never be less than Vmcg or greater than V2, the takeoff safety speed for the second second climb. Even at max gross, the pilot can vary Vr as necessary within those parameters to consider runway contamination.

    I realize that you want a number but there just isn't any for what you asked.

    Vr speed for A340 at 365,000kg with flaps 20 would be around 175 knots.
