What is the taste of meats we don't normally eat

Question

For example Whale, dog, cat, rat etc. Other cultures eat them and I was told rat is quite nice but what is the taste and how would you prepare these foods?

I have had caribou and it was purple.... and tasted musty.  I have also tried shark..... and it  had an odd taste.... but wasn't unpleasant at all.

hedgehog tastes a lot like chicken. The others, poor things. To me it is unspeakable, but I do like roasted hedgehog!
